Ingredients:-
For Dahi Tadka:-
2 cups beaten curd
2 tsp. Gram flour (Besan)
1 tsp. Ghee
1 tsp. Mustard Seeds
1 tbsp. White lentils (Urad Dal)
2 Round Boriya Chillies
¼ tsp. Asafoetida
For Vadas:-
½ cup Green Gram (Moong Dal) and ¼ cup White lentils (Urad Dal) soaked for 4 hours
Water
Salt to taste
Asafoetida
1 tbsp. Date and Tamarind Chutney
Red Chilli Powder
Black salt
Roasted Cumin Seed Powder
Method:-
1. Warm 2 cups of curd and add gram flour and stir until no lumps are seen.
2. Once it boils up, turn the flame off.
3. In a kadhai, heat ghee, mustard seeds, urad dal, red chillies and saute until Urad Dal turns brown.
4. Now add asafoetida and get it off the flame and pour it on the curd mixture and mix well.
5. Add salt to taste and refrigerate after it comes down to room temperature.
6. Grind the soaked Dals to a coarse paste and mix salt and asafoetida to it.
7. Beat the batter with an electric beater.
8. Heat oil for frying and scoop out a dollop of batter with a wet spoon and fry on medium heat.
9. Soak the fried Vadas in salt water for 5 minutes.
10. Squeeze out water and serve by pouring the chilled Dahi Tadka, Date and Tamarind chutney, red chilli powder, black salt and roasted cumin seed powder.
